Signature Fine Dining
Three restaurants under Executive Chef Miriam Hale — a degustation counter, the main dining room and a private table inside the kitchen itself.
A restaurant that happens to be a hotel
The kitchen writes menus around the morning's deliveries from the Hills and the Gulf — nothing on the degustation survives past the season it was built for.
Non-residents are welcome at every restaurant; residents hold the waitlist priority and the last-call tables on event nights.

The dining program
The dining room
Seasonal à la carte and the seven-course degustation — river-facing tables from 18:00.
Chef's table
Eight seats inside the kitchen, twelve courses, narrated by the brigade — Tuesday and Friday.
Private dining room
A closed room for fourteen — its own menu, its own sommelier, its own pacing.
Cellar pairings
The sommelier's pairings draw from the 4,200-bottle reserve three floors down.
Late menu
A proper kitchen after midnight — for the floor, the salon and guests who sleep late.
Garden line
The rooftop greenhouse supplies herbs and leaves cut the same morning they are served.

The degustation
Seven courses, $185 per guest, pairing optional at $120. The menu changes with the market — Spencer Gulf prawns, Hills truffle in season, dry-aged beef from a single Limestone Coast station.
Dining while you play
The salon and the premium zone run table-side service from the same kitchen — courses arrive between hands. Room service draws from the main menu around the clock for residents.
$185 pp degustation
Degustation $185 pp, pairing +$120. Chef's table $285 pp with 50% deposit. Private dining room quoted per event.
